She directed us to Nookta Rose Milling in Metchosin, a small mill to get the flour for the bread, which was beyond cool!
We got some einkorn flour, an ancient grain which many people are able to digest more easily even if they are allergic to wheat. My friend Shannon, who is a professional chef recommended this flour. Follow Shannon @shannonsnaturalkitchen on Instagram. I don’t recommend using it in your sourdough starter – I didn’t like the texture. It made my sourdough starter runny, watery and in the end the starter separated. So this flour is a little tricky to work with.
